TOS: Has all the brilliant stories that made Star Trek so popular, and some of the worst episodes in the series, both in the hilarious campy way, and the offensive and unwatchable way. Incredibly progressive for the 60s, but not so progressive as to avoid making sexual harassment jokes or using racist stereotypes, so do watch it, but be aware of the historical context.
TAS: A continuation of TOS, but with significantly worse pacing, less racism, and hilariously bad animation. The bad animation is honestly the main reason to watch it, but there are couple well-written episodes too.
TNG: Beautiful philosophical stories and great characters that play off each other perfectly make this the best Star Trek series by far... as long as you ignore most of season 1.
DS9: If this one's your favorite, you have great taste. Only reason it isn't mine is because TNG and VOY were bigger parts of my childhood. A wonderful plot full of political intrigue and complex characters, stretching throughout the entire series.
VOY: From the premise you'd think it's about struggling to survive in deep space without help from the Federation, but in practice it's just TNG with less character development. Still a great show though, and one I'd recommend watching.
ENT: As a prequel, it's very prequel-y and has a few good episodes scattered among a mostly average to bad set. Season 4 is where the show really hit its stride and contains all its best episodes, and it's also the final season.
DIS: Seasons 1 and 2 are like a gritty reboot of Star Trek, with tortured characters going on ethically dubious missions. Then from season 3 onward the tone swings way in the opposite direction and becomes about restoring hope in a dark time. It's got some pretty good ideas in both halves, but never quite reaches the heights of classic Trek.
ST: A companion to DIS that will probably be forgotten because they're all 10-minute shorts, which is a shame because they're really good for the most part.
PIC: The most disappointing Star Trek show - three seasons began with fascinating setups, great first episodes, and resolved them in the most unsatisfying way possible. Still worth watching for the action and the few good moments.
PRO: Don't sleep on this one, it's probably the best of new Trek even if it's the least watched and is stuck on Netflix. Follows a group of kids escaping slavery and becoming Starfleet heroes, learning about the Federation's utopian ideals along the way. It's inspiring, and beautifully written and animated. Only problem is that it's written as a kid's show, so if you hate those in general, it won't be your favorite.
LD: It's both a parody of Star Trek and a part of Star Trek, and handles both roles equally well. Characters are some of the most well-written in the franchise despite episodes being half the length of most shows. There is a lot of reference humor, but there's enough non-reference-based humor to still be entertaining to non-Trekkies.
SNW: A direct prequel to TOS featuring one of the best captains in the franchise. It's basically all gimmick episodes, so hopefully that's your thing, but on the rare occasion you get a typical Star Trek episode, that isn't also focused on the Gorn (which IMO this show severely mishandles), it's top-tier stuff.
