This is a very good question. The one I found to enjoy the most was the Thunderbird, but I also found the Griffon to be fascinating. Most interesting were the sea creatures, all of them. They come in a vast array of species and I had a blast finding them all. Some are very large (think Nessie) and some are microscopic!
